Is it a cake, is it a pudding? I’m no great shakes at baking but a few months ago I found this recipe. It sounded so easy I tried it straight away and it turned out perfectly. Yesterday, being relieved of the usual cooking duties, I did it again to share with some other Mums and it was just as nice. The original recipe has a number of variations. Here’s how I do it.
Devonshire Apple In and Out
6oz plain flour
4oz caster sugar
1 large or 2 small eggs
1 medium bramley apple
1 oz demerara sugar
Rub the fat into the flour then add the sugar and beat in the egg. (Mixture now looks like lumpy batter). Peel the apple and slice directly into the mixture in a well-buttered pudding dish. Sprinkle with generous layer of demerara sugar. Bake at 180 (Gas Mark 4) for around 30 mins until golden.
The instructions suggest it’s a pudding and I do make it in a pyrex dish, but I leave it to go cold and find that it cuts nicely into 8 chunky slices.
